From June 1st our increasingly popular Michelin Star Magic package, which we run in collaboration with Gleneagles, will feature the six course du Marché tasting menu. In addition to a complimentary room upgrade (subject to terms) and full use of The Club, you will also receive a complimentary glass of Edouard Brun Cuvée Spéciale Champagne before embarking on the full tasting menu experience.
The constantly changing du Marché menu is inspired by the seasons and local produce.

As the weather finally improves and Scotland's wonderful summer produce comes on stream, our du Marché tasting menu kicks up a gear. In celebration of this, we are happy to share the recipe for a new season du Marché fish dish. This quintessentially Scottish summer dish features new season wild Scottish salmon - which for us is line-caught between Montrose and Arbroath - and rope-grown mussels from Skye.

Congratulations go to our assistant sommelier Csilla Sebestyén, who has been awarded the Coburg Bursary on the Fine & Rare Wine Specialist course in Vienna. Csilla, who comes from a highly-regarded Hungarian winemaking family, is one of a select few to be accepted on this exceptionally prestigious course, run by Europe's most respected Masters of Wine and Master Sommeliers. Along with high-level theoretical and practical sessions and viticultural workshops, she will be participating in numerous in-depth tastings of truly exceptional wines.
